This Kenya is roasted as an omni roast, which means it’s designed to perform well across different brewing methods. In filter brewing, it naturally shows its most elegant side. When you grind a bit coarser and brew with a V60, Kalita or batch brewer, you’ll notice how clean and structured the cup feels. There’s no need to rush the extraction a calm, steady brew brings out the balance this coffee is known for.

What often surprises people is how well this coffee also works as espresso. Because it’s not roasted too dark, the espresso will feel lighter and more refined than a traditional espresso roast. Grinding slightly finer and allowing a longer extraction usually gives the best results. In fully automatic machines, it helps to avoid the strongest settings and let the coffee breathe a little.

Even in an AeroPress or Moka pot, this Kenya adapts well as long as you keep the heat gentle and the grind size somewhere in the middle. It’s a flexible coffee that rewards small tweaks rather than strict rules.

Since day one in 1995, Castelgazzo was designed as more than a coffee farm. It’s a permanent project combining forestry production, environmental conservation, and sustainable development. The land’s been cared for with that triple commitment from the start.

The story

Finca Castelgazzo is located in an exceptional place: the buffer zone of the Montecristo National Park, right in the heart of the Trifinio Biosphere Reserve where El Salvador, Guatemala and Honduras meet. On these high mountain slopes, surrounded by cloud forests at over 1,500 meters above sea level, the coffee plants thrive in a cool and stable microclimate ideal for producing high-quality coffee.

The farm was founded in 1995 by Mario and “La Geña” Cristiani with a clear vision: to create an agricultural and forestry project that respects nature while supporting both economic and social development. What began as a carefully designed sustainability project has grown into a farm where forest management, environmental protection and high-quality coffee production exist in perfect harmony.

After the passing of the founders, Castelgazzo is now run by their daughters — Paola, Lucía and Carolina — who have preserved the original mission: to create a place defined by peace, beauty and nature, where each harvest contributes to a sustainable family legacy.

Castelgazzo works exclusively with shade-grown, reforested plots and natural water sources, and is committed to long-term relationships in which producers and coffee drinkers strengthen one another. Every bag of coffee contributes to the preservation of this unique ecosystem and to the continuation of a family heritage rooted in care, respect and quality.
